Now, he aims to redefine the culinary scene once again with concepts that bring big city style at affordable prices. He invites you to experience Allora, Arrosta, and Maverick Texas Brasserie.

Brannon Swindle


Director of Hospitality Brannon Swindle leads the Maverick Restaurant Group teams across Allora, Arrosta, and Maverick Texas Brasserie. Rooted in friendly service and Texan hospitality, he creates unforgettable guest experiences that delight. He’s previously worked on the management teams of other San Antonio fine favorites, including Cured and Cappy’s.
